The tailored still has a sixty litre extract chamber for carefully chosen botanicals to remove the purest of flavors for their artisan spirit range.

They are committed to sustainability, the still named Ada, is powered by four electric heating rods, and uses no gas or oil fuels, greatly reducing their carbon footprint. The distillery also hosts it’s own SALSA accredited bottling facility and has an HMRC compliant bonded storage for the warehouse of all their spirits range and third party spirits produced at the distillery in Worminghall, Buckinghamshire, England.

City of London Distillery & Bar made gin distilling back to the City in 2012 after an absence of nearly two hundred years. The City of London has a wealthy gin history. Within the Gin Craze in the 18th century, there was a gin distillery or gin shop in each street in the City exploiting from the spices and citrus fruits coming into the port of London. When the gin rage finished, few gin distilleries survived, and for almost two hundred years there had not a single gin distillery in the town.

That is until the City of London Distillery started in 2012. Through these two hundred years, the gin distilling method improved, and gin has been more refined with more delicate flavors.  Then came the next gin revolution with the advent of the small-batch micro-distilleries, like them, bringing interest, variety, and experimentation, new botanicals, combinations, new gins.

The journey starts at their single farm, where 100% of its barley is grown. It is then conventionally hand-mashed, floor malted, and fermented slowly for 7 days in its wooden washbacks that were handcrafted at their own cooperage.

They use direct fire to heat their small copper pot stills and mature the spirit in hand-picked casks. Lastly, its whisky is expertly blended and bottled on-site at their distillery.
